Ingredients
  

  • 3 Cups Watermelon cubed
  • 1 Can Black Beans drained and rinsed
  • 1/2 Red Onion sliced
  • 1 Cup Cucumber diced
  • 1/4 Cup Fresh Mint chiffonade
  • 1/2 Cup Feta crumbled
  • 1 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp Fresh Lime Juice
  • 1/2 Tsp Honey
  • 1 Avocado cubed
  • Salt & Pepper to taste

Instructions
 

  • In a small bowl, whisk together olive oil, lime juice, and honey (if using). Add salt and pepper to taste.
  • In a large bowl, gently toss together the watermelon, black beans, cucumber, red onion, and mint.
  • Sprinkle feta over the salad and drizzle with the dressing. Gently toss again just to combine. Add avocado last and mix gently to avoid mashing.
  • Serve right away for the freshest taste, or let it chill in the fridge for 15–30 minutes to allow the flavors to meld.
