Summer Watermelon Black Bean & Feta Salad

Ingredients
- 3 Cups Watermelon cubed
- 1 Can Black Beans drained and rinsed
- 1/2 Red Onion sliced
- 1 Cup Cucumber diced
- 1/4 Cup Fresh Mint chiffonade
- 1/2 Cup Feta crumbled
- 1 Tbsp Extra Virgin Olive Oil
- 2 Tbsp Fresh Lime Juice
- 1/2 Tsp Honey
- 1 Avocado cubed
- Salt & Pepper to taste
Instructions
- In a small bowl, whisk together olive oil, lime juice, and honey (if using). Add salt and pepper to taste.
- In a large bowl, gently toss together the watermelon, black beans, cucumber, red onion, and mint.
- Sprinkle feta over the salad and drizzle with the dressing. Gently toss again just to combine. Add avocado last and mix gently to avoid mashing.
- Serve right away for the freshest taste, or let it chill in the fridge for 15–30 minutes to allow the flavors to meld.
