Refreshing and aromatic, this Ginger Lemongrass Iced Tea is the perfect balance of zesty ginger, fragrant lemongrass, and a touch of sweetness. It’s a light and cooling drink that pairs beautifully with savory and spicy dishes. It also pairs beautifully with warm sunny days.
In a medium saucepan, bring the water to a boil. Add the lemongrass and ginger slices. Reduce the heat and let it simmer for about 10 minutes to infuse the flavors.
Turn off the heat, add the tea bags to the pot, and steep for 4-5 minutes, depending on how strong you like your tea.
Remove the tea bags, lemongrass, and ginger slices. Stir in the honey until dissolved. Let the tea cool to room temperature, then add the lemon juice.
Transfer the tea to a pitcher and refrigerate for at least 1 hour. To serve, pour over ice and garnish with fresh mint leaves and lemon slices for a refreshing touch.
