Wake up to the taste of fall with this delicious Pumpkin Pie Baked Oatmeal! It’s like having a warm slice of pumpkin pie for breakfast, but healthier and packed with nutritious oats. Made with real pumpkin, cozy spices, and a touch of sweetness, this baked oatmeal is perfect for meal prep or feeding a crowd on a crisp autumn morning.
Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish or similar-sized dish.
In a large mixing bowl, whisk together the pumpkin purée, milk or dairy alternative, eggs, maple syrup, and vanilla extract until smooth.
Stir in the oats, pumpkin pie spice, baking powder, baking soda, and salt. Mix until well combined.
Pour the mixture into the prepared baking dish and spread it evenly. Bake for 35-40 minutes, or until the top is golden and the center is set.
Let it cool for a few minutes before slicing into squares. Top with some Greek Yogurt Cream Cheese Frosting.
Frosting
In a small bowl, whisk together the Greek yogurt, cream cheese, maple syrup, and vanilla extract until smooth and creamy. For extra fall flavor, you can mix in cinnamon or pumpkin pie spice.

Notes
For a thicker consistency, place the frosting in the fridge for 15-20 minutes before using. This will firm it up a bit, making it easier to spread. Additionally, you can strain the yogurt by placing it in some cheese cloth over a bowl for 2 hours.
