Spicy Garlic Aioli
In a bowl, combine egg yolk, vinegar, 1 1/2 tsp of lemon juice, mustard, and salt. Whisk all ingredients until combined and mixture is bright yellow (will take about 30-45 seconds).
SLOWLY add 1/4 cup of oil using a 1/4 tsp while whisking constantly.
After the 1/4 cup is incorporated, SLOWLY add the remaining 1/2 cup of oil in a slow but constant stream whisking constantly.
Mayonnaise will become thick and lighter in color as it begins to emulsify. Will take a while ( about 8-10 minutes).
Mix mayo with lemon juice, garlic, black pepper, and siracha. You can also add a couple dashes of liquid amino for an added umami taste
Bread
Preheat oven or toaster oven to 250 degrees Fahrenheit.
Place baguette on a baking sheet and warm for 5-10min (until bread is hard and crisp).
Let bread cool before assembling sandwich (warm bread will break the mayo emulsion). Cut bread lengthwise making sure to not cut all the way through.
Assembly
Layer bread with aioli and turkey meat. Add pickled veggies and garnish with cilantro.
Notes
Pickled veggies will last up to 2 weeks in the fridge, keep in mind the longer it sits the softer the veggies will get and the spicier the veggies will become!Tip: When making the aioli, it may be easier if some one adds the oil while you whisk! Aioli can also be made using a blender or food processer (if available). Store aioli in an airtight container in the fridge- can be stored in the fridge for 7-1o days.
