Experience the flavors of the Andes with our Chicha Andina, a Venezuelan spin on a South American corn-based beverage that's both refreshing and culturally rich. Made from rice instead of maize and spiced with cinnamon and cloves, this drink offers a taste of history in every sip.

Ingredients
  

  • 1 whole Pineapple
  • 1 cup Rice
  • 1/4 cup Sugar preferably brown or unrefined sugar
  • 2 sticks Cinnamon
  • 4 Cloves
  • 1 Star Anise

Instructions
 

  • Wash, peel, and core pineapple. Reserve the pineapple rind for later and reserve 2 cups of cubed pineapple.
  • In a large sauce pan, add the pineapple rind and cubed pineapple. Cover with enough water until peel and pineapple are fully submerged.
  • On medium heat, bring the pineapple to a low boil for 30 minutes.
  • As the pineapple is boiling, in a smaller sauce pan add 2 cups of water and add in the spices. Simmer spices for about 10-15 minutes.
  • Strain the spices from the spiced water and set water aside.
  • When the pineapple has been boiling for 20 minutes, add in the rice, sugar, and spiced water. Let boil for 10 minutes.
  • After 10 minutes have elapsed, check to the rice for doneness. If rice is still hard, continue to boil until soft.
  • Once rice is soft, pour mixture into a blender or food processor and blend until smooth. Strain mixture and let cool.
  • Pour over ice, garnish with a pineapple slice, and enjoy!
