Southwest Style Stuffed Bell Peppers

Ingredients
  

  • 4 Bell Peppers any color
  • 1 Lbs Lean Ground Beef
  • 1 Medium Onion diced
  • 3 Cloves Garlic minced
  • 1 Can Black Beans
  • 1 Can Fire Roasted Corn
  • 1 Can Tomato Sauce
  • 1 Can Diced Tomatoes
  • 1 Cup Cooked Brown Rice
  • 1 Cup Shredded Monterey Jack Cheese
  • 1 Tbsp Chili Powder
  • 1 Tsp Cumin
  • 1/2 Tsp Paprika
  • Olive Oil
  • Salt
  • Pepper

Instructions
 

  • Rinse and dry the bell peppers. Once dry, remove the tops of the peppers and set the tops aside. Cut around the stem of each bell pepper top and dice. Set aside. With the pepper tops removed, begin to core and deseed the peppers. When finished, set them aside.
  • In a large skillet, heat olive oil over medium heat. When the oil is hot, add in the diced onion and sauté until translucent (about 5-10 minutes). Once the onions begin to turn translucent, add in the minced garlic and the diced bell pepper. Continue to sauté for an additional 2 minutes. Stir continuously as to not burn the garlic.
  • After 2 minutes, add in the ground beef and brown the meat until cooked thoroughly (about 10-15 minutes).
  • While the ground beef is browning, pre-heat the air fryer at 400 degrees for 5 minutes.
  • Lightly coat the bell peppers with olive oil and once the air fryer is pre-heated, bake the peppers for 6 minutes.
  • In the pan with the ground beef and in the corn (drained), beans (drained), tomatoes, chili powder, cumin, paprika, salt, and pepper. Heat until mixture is warmed through (about 5 minutes).
  • After 5 minutes, add in the cooked rice and stir. Taste and adjust seasoning as needed.
  • Stuff mixture into the peppers and air fry at 400 degrees for an additional 6 minutes. After 6 minutes, top with cheese and air fry for an additional 4 minutes.
  • Serve with salsa, avocado slices, or sour cream!

Notes

Substitute ground beef for turkey, chicken, or polenta!  
If baking in an oven, pre-heat the oven to 350. Bake the peppers for 15-2o minutes to help soften them. Once filled, bake for an additional 15-20 minutes. During the last few minutes of baking, top the peppers with cheese!
